I made this yesterday on the stove rather than a grill. We really enjoyed the flavors! I didn't have tomatoes so I used avocado, sun-dried tomatoes and red leaf lettuce. The avocado masked the cayenne a bit, but still, the flavors of the spread was delightful.

Grilled Chicken Pita Sandwiches

Ingredients

- 3 chicken breasts

- 1/2 lime - juiced

- 1/2 teaspoon salt

- 1/2 teaspoon pepper

- 1/2 teaspoon cayenne pepper

- 4 tablespoons mayonnaise

- 1 tablespoon Dijon mustard

- 1 tablespoon basil - fresh and chopped

- 1 teaspoon honey

- 1 teaspoon Herbs de Provence

- 2 tomatoes - chopped

- 2 cups lettuce - chopped

- 3 pita bread - whole wheat or favorite variety

Prep Time: 20 minutes

Cook Time: 10 minutes

Container: grill, small bowl, baking sheet

Servings: 6

Grilled chicken flavored with lime and cayenne pepper highlights these tasty pita sandwiches dressed with an irresistible honey mustard sauce.

Directions

Lay the chicken breasts on a baking sheet and sprinkle with olive oil, lime juice and season with salt, pepper and cayenne pepper.

Allow these to sit for 5-10 minutes.

Heat the grill to medium.

Grill chicken 8-10 minutes or until it is no longer pink on the inside. Turn once half-way through cooking.

Meanwhile, in a small bowl, mix together the mayonnaise, dijon, basil, herbs, and honey.

Remove chicken from the grill and allow it to sit for 5 minutes, then thinly slice the chicken.

Slit the pitas in half, and spread mayonnaise mixture on the inside.

Fill each side with equal amounts of lettuce, tomatoes and sliced

chicken.
