RECIPE: REC: Grilled Corn on the Cob with Chipotle Lime Butter (inspired by Carianna)

3 ears of corn

2/3 of a stick of butter

1 head of roasted garlic

2 tsp. finely minced basil (i used lime basil cuz i'm self-proclaimed king of the basil (as opposed to domesctic goddess))

1/2 chipotle en adobo, minced (feel free to use more if your #1 sweetie isn't a wimp.)

salt to taste.

soften the butter at room temp or in the microwave. don't melt it. moosh all but corn together with the back of a fork (or your favorite mooshing utensile).

carefully peel back the husks of the corn and desilk it (depite the fact that my spell checker insists on devilling it). slather the corn with the butter and return the husks to their original orientation.

place on the grill directly over high heat. wait til husks char on one side. turn corn and repeat.

eat.

I have had a tough time finding those Chipotle peppers. Any hints? I used a liquid form that I found at King's for a recent recipe, but would love either the real stuff or the ones in the can. I have tried Kings, Wegmans, Stop and Shop, etc....

Recipe sounds great and would like to make it....

We are on the train line to NYC from NJ....I have tried more than one place. Thanks for the picture, now I know what to look for. Wegmans has an ethnic section as well as an ethic aisle, have tried each area. Will keep searching. I have even called the local A&P as well as Stop and Shop to search their computers...


P.S. I really don't live "on" the train line...Too dangerous and too noisy...

Great timing Rick...I just made this for our "épluchette de blé d'inde" tomorrow

Euh...I don't know what that is in English. Corn husking party? Anyway it's a Quebec end-of-summer tradition involving huge sacks of fresh corn. "Blé d'inde" is Québécois French for corn. NOBODY calls it "maïs".

But I digress. I made the butter for tomorrow and it's dee-lish. I am lime basil challenged so I added a little lime zest.
