Grilled Pork Loin with Apple & Zucchini
Six 10-12oz bone in pork loin chops
1/4 c minced shallots
2 tbsp freshly ground black pepper
4 tbsp olive oil
3 med size green or yellow zucchini, peeled and cut in half lengthwise and cut into 1/2" slices
1 small red onion, peeled and thinly sliced
3 Granny Smith apples, peeled, quartered, cored and cut into 1/2" thick slices
2 tbsp chili flakes
1/2 c honey
3 c apple juice
1 c veal stock
18 small new potatoes, cooked & cooled
Place the pork chps ina large shallow bowl.
Mix the shallots, pepper and 3 tbsp of the olive oil tog. and rub evenly over the pork chops Marinate in the refrig for 2 hours
Grill the pork chops over a med. hot fire for 5-6 mins. per side for medium doneness. Keep warm.
While the pork is grilling, heat the remain. 1 tbsp oil in a medium skillet and saute the onion and apples with the chili flakes until the apples are golden and the onions are limp. Add the honey and apple juice and cook until the mixture is reduced by one-third. Add the veal stock and cook until the mixture is reduced by one-third. Add the cooked potatoes to the sauce and cook until the potatoes are heated through.
Place two pork chps on ea. serving plate. Spoon a generous amount of the sauce over the chops. Arrange the potatoes and grilled zucchini strips artfully on ea. plate. Serve immediately.
