Grilled Turkey Sandwich with Blue Cheese Mayonnaise
Makes: Two 8" Sandwiches
Total Time: 15 Minutes
For the Mayonnaise —
Whisk Together:
1/4 cup mayonnaise
1/4 cup blue cheese, crumbled
2 T. apricot preserves
For the Sandwich —
Prepare:
2 8" sourdough rolls
Spread Each Roll With:
1/4 cup Mayonnaise
Fill with; Grill:
1 lb. roast turkey breast, sliced, divided
2 cups arugula, divided
Whisk together ingredients for Mayonnaise. Preheat griddle.
Prepare rolls by slicing thin layer off the top and bottom of each roll. Slice lengthwise to make two halves.
Spread with Mayonnaise.
Fill each sandwich with half of the turkey and arugula. Grill on hot buttered griddle until golden brown. Slice and serve.
