REC: Heaven and Earth as Made by Grandma (Himmel und Erde wie von Oma gemacht)
Ingredients for 4 people:
1 kg potatoes
Salt
4 apples (each about 150 g)
2 tablespoons sugar
100 ml apple juice
1 onion
300 ml milk
50 g butter
250 g black pudding sausage or other German sausage (bratwurst, etc.)
1 tbsp sunflower oil
Marjoram for garnish
Preparation
Peel potatoes, wash and cook in boiling salted water for about 20 minutes. Peel apples, quarter and remove the cores. Coarsely chop apples. Carmelize the Sugar and deglaze with apple juice, add the apples, boil and simmer for about 25 minutes. Peel onion and slice into rings.
For the puree, boil milk and butter. Drain potatoes, add milk mixture and mash with a potato masher. Slice the sausage into 8 slices and remove skin. Heat oil in a nonstick frying pan and fry sausages from each side about 1 / 2 minute. Remove, keep warm and cook onion rings in the dripping about 3 minutes. To serve, heap in order the mashed potatoes, applesauce, sausage and onion rings on a serving platter. Garnish with marjoram.
