Isn't this marzipan, not almonod paste? ...
Almond paste is ground nuts mixed with sugar; marzipan is ground nuts mixed with cooked sugar syrup. A minor difference but a major one when it comes to flavour, sweetness, texture, and uses. Many a good recipe has turned out poorly because one was used in place of the other.
