I don't know the name of the cookbook she got it from

I have a hard time downing snow peas. But this recipe made it real easy. It took away the strong taste of the snow peas that I don't care for. I eat them, regardless, but this recipe certainly will make them more enjoyable to eat, for me.

HONEYED CARROTS

Serves 8

This bright mix of color and taste can serve as a vegetarian dish or appetite provoking first course.

4 large carrots cut into match sticks

1/2 c chicken broth or water

1/8 t. cayenne pepper

1/2# sugar snap peas or snow peas, cut into strips (she left whole)

2 tbsp honey (or agave nectar) She used agave nectar

2 tbsp fresh lemon juice

2 tbsp fresh orange juice

Salt and pepper to taste

1/4 c. chopped chives (she couldn't find chives so she used scallions)

In a large skillet bring carrots and broth to a boil, cover and cook 1 minutes. Remove cover and add cayenne and peas. Cook until almost all liquid has evaporated.

Stir in honey, orange juice, lemon and lime juice. Cook another 3 minutes. Taste for salt and pepper.

 
A friend had you for lunch!! OMG, I need to stay away from the cannibals in that part of Tampa Bay!
