Rec. Hot Pole Bean-Potato Salad

Likely this is nothing new to anyone but just in case, here it is to share. I've made this several times and love the flavor of the warm salad. What's not to like when there's bacon in it! I've also made it without bacon and it's just as delicious....must be the mayo.....

1# new potatoes, peeled and cut into 3/4" cubes

1# fresh pole beans, cut in 1-1/2" pieces

6 slices bacon

1/2 c finely chopped onion

1/4 c. mayonnaise or salad dressing

1 tbsp vinegar

1 tsp salt

1/4 tsp garlic powder

1/8 tsp white pepper

Cook potatoes and beans, covered, in boiling salted water in a med. saucepan, 10-15 mins. or until tender, drain.

Fry bacon until crisp, remove from skillet and drain, reserving 1 tbsp drippings in pan. Crumble bacon. Saute onion in drippings, stir into vegetables. Combine remaining ingredients, pour over vegetables, stirring well. Add bacon, toss gently. Serve warm. Serves 6

 
This is new to me Marsha. I make killer Hot German potato salad, but never heard of putting

beans in with it, or adding some mayo. I will definitely try this for a nice variation on the old stand-by I always make.
