Just picked up this new baking book - looks really good. Lots of the usual suspects, but some good looking muffins and other sweets. (For example, maple and pecan muffins, banana and cinnamon muffins, spinach and cheese muffins, icebox banana cheesecake, nutty apple loaf all look good)
Tried the Blondies and they are a keeper.
5 oz. white chocolate, chopped
1 stick unsalted butter
3/4 cup sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
pinch of salt
1 cup pecans, chopped
Melt the chocolate and butter together in a bowl over a saucepan of simmering water. Leave until melted and smooth.
Remove from heat and add the sugar, stirring well.
Add the eggs and vanilla, stirring briskly so that the eggs don't scramble. (Will look curdled)
Add flour, salt and pecans and combine.
Spoon into prepared 13x9 inch pan. Baking at 325 for 35-40 minutes, or until golden brown and center is still soft. Let cool.
These are really thin, but super addictive!
