Its just that I brought two of these cakes in to work on Monday and they were gone so fast you wouldn't believe it. SO many people asked for the recipe.

The recipe below makes 1 loaf. I always double the recipe and put it in a 9X13.

Pumpkin-Chocolate Chip Bread

1/3 cup butter

1 cup sugar

2 eggs

1 cup pumpkin

1 1/3 cups flour

1 tsp. baking soda

1/4 tsp. baking powder

3/4 tsp. salt

1/2 tsp. nutmeg

1/2 tsp. cinnamon

1/2 tsp. vanilla

1/3 cup water

lots of chocolate chips:)

Measure and mix together sugar and shortening in bowl. With a beater, beat eggs, one at a time, until fluffy. Add to sugar and shortening. Stir in mashed pumpkin. Add flour, baking soda and powder, salt, and spices. Mix in vanilla, water. Stir just enough to moisten.

Spoon into a greased 9” by 5” pan. Bake at 350 degrees for 45-50 minutes. (check much sooner if doubling and putting in a 9"X13" pan.

Glaze: Combine powdered sugar, heavy cream, milk, and cinnamon. Cream cheese frosting would be great too!

I make a pumpkin chocolate chip cake for my son's birthday each year.

It's his favorite.

I think I found it online. I bake it in a bundt pan.

I'll try this one too!

Rec: My Son's Pumpkin Chocolate Chip Birthday Cake

Pumpkin Chocolate Chip Cake

3/4 cup butter, softened
1 1/2 cups granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 cup chocolate chips
1 1/2 cups canned pumpkin puree
2 squares unsweetened chocolate, melted
1 tablespoon unsalted butter
1/2 cup finely chopped walnuts, optional

Preparation Instructions:

1. Beat butter, sugar and brown sugar until light and fluffy. Add vanilla. Beat in eggs one at a time.
2. In another bowl, combine flour, baking powder, baking soda and cinnamon. Remove 1/4 cup flour mixture. Mix with chocolate chips. Set aside.
3. Stir pumpkin puree into butter mixture. Stir in flour mixture. finally, fold in chocolate chip mixture.
4. Into one third of batter, stir melted chocolate.
5. Butter a tube or Bundt cake pan. Sprinkle with walnuts, if used.
6. Spoon half of pumpkin batter into pan. Top with chocolate batter. Finish with remaining pumpkin batter. Smooth top. Sprinkle with some extra nuts.
7. Bake at 325 degrees for 1 hour 15 minutes until cake tests done.
8. Cool on a rack before turning out onto plate.

We like this plain, or with a simple butter, cocoa, powdered sugar glaze.
