Not a casserole, but a potato salad that you make from cooked potatoes.
3 lbs steamed or boiled small "new" potatoes
1 jalepeno pepper, chopped finely
kernels from 1 ear cooked corn-on-the-cob
1 clove garlic, minced
1/4 - 1/2 cup mayonnaise
1/4 cup sour cream
3 T cider vinegar
1/2 tsp cumin
salt and black pepper to taste
Cook corn and jalepeno until soft and beginning to caramelize; add garlic until flavorful and set aside. Combine remaining ingredients and pour over potatoes. Refrigerate at least 2 hours before serving.
