1 3/4 cup ap flour
1/4 tsp. salt
1 tsp. baking soda
1/2 cup baking cocoa
1/2 cup butter
1 cup sugar
2 eggs 1 tsp. vanilla
1 cup toasted chopped pecans
15 large marshmallows cut in half
Preheat oven to 350 F. Line 2 cookie sheets with parchment.
In a small bowl sift together flour, baking soda, salt and cocoa. Set aside. Cream together butter, sugar and vanilla. Add eggs one at a time until well mixed. Add flour mixture and mix just until combined. Add nuts.
Dampen hands and roll scant tablespoon into ball. Place about 2 inches apart on sheet. Bake 12-14 min. until not quite firm. Do not overbake, Remove from oven and place 1/2 half of a marshmallow, cut side down, on each cookie. Return to oven for about 1 min. Cool on racks, then ice.
Icing:
1/2 cup cocoa powder
1 1/2 cups confectioner's sugar
About 3 Tbsp. boiling water
Pinch of salt
5 1/3 Tbsp. melted butter
Place cocoa, salt and sugar in small bowl. Add hot butter and boiling water and beat until smooth.
Frost about half of each cookie with generous tablespoon of icing, letting some of the marshmallow show. Cool until frosting is set.
