Rec. Iced Tomato Soup

1 small onion, quartered

1 to 2 cloves garlic, pressed

3-4 large ripe tomatoes, peeled and seeded

1 to 2 tbsp olive oil

1 tsp sugar

1 tbsp paprika

salt to taste

2 c tomato juice

1 ripe avocado, diced

fresh basil

Combine first 8 ingredients in container of electric blender; process until tomatoes are pureed. Remove from blender container and chill overnight.

Just before serving, return to blender container, process 30 seconds. Stir in avocado; garnish with basil.

Makes about 4 cups.
