REC Indian Chicken with Ginger

medium sweet green pepper

2 tomatoes

1-inch piece of ginger

1chopped garlic cloves

Pinch salt

Pinch chilli powder

1/2 tsp coriander

1 tsp tomato paste

3tbs olive oil

2 boneless chicken breasts

1 tbs yogurt

Salad (lettuce, tomato, cucumber, lemon)

Cut onion, green pepper, and tomato and chicken into large chunks; cook in oil for a couple of minutes and add chicken.

When browned, add yogurt, tomato paste, ginger, garlic, salt, and chilli powder. Fry for 5 minutes and then add a little water.

When most of liquid has boiled off, add coriander and serve ontop of a bed of salad with a lemon garnish.

Good topped with more yogurt and served with naan bread.
