RECIPE: Rec: Indonesian-style Broccoli Salad

I made this up yesterday as I was throwing a salad together for my orchestra dinner. Sorry I don't have exact quantities, but I estimated to the best of my recollection. I'm sure it would be very forgiving and just do the ingredients to taste.

Toss together:

2 heads of broccoli cut into small florets and small chunks of tender stem

1/2 fresh pineapple cut in small chunks

1 cup sunflower seeds

1 cup cashews

1/4 cup toasted sesame seeds

1 small red onion, minced

1 bunch scallions, diced, white and green part

1 can of sliced water chestnuts

1 cup dried cranberries

juice of 1 lime,1 lemon, and 1 orange

zest of the lime

4 cloves garlic, smashed and minced

2-inch piece of ginger, grated

1/4 cup cider vinegar

1/4 cup dark sesame oil

3/4 cup peanut oil

1/4 cup soy sauce

1/4 cup mirin

1 tbls. fish sauce

1 tablespoon red pepper flakes

2 tsp. freshly ground white pepper

1/2 cup brown sugar

1/2 tsp. five spice powder

salt to taste.

Combine well and place in serving bowl. Refrigerate until ready to serve. Sprinkle more sunflower seeds and cranberries on top to garnish.

This was cleaned out at last night's dinner. It was a great change of pace over holiday mayonaise gloppy salads.

I must admit, I didn't know either but knew it stood for something similar. I won't tell you what my wild mind came up with for LDP.

You might be interested to know I have spent the week auditioning cellos and am about ready to be the proud owner of a new amazing instrument (Richard's Christmas present to Richard). We're down to the final two and both of them are going to be at my house tomorrow for me and my teacher to kick the tires and make a decision.

Yay!!!!

And none too soon, next orchestra concert has 1812 Overture on it (along with the top 10 Russian Hits of all time).

It's really amazing when you trade up from a student instrument to a professional instrument, they pretty much play themselves.
