the baby even loved this, although he loves everything.

Jamaican Red Bean Stew

1 T EVO

3 cloves garlic, minced

2 C sliced carrots

1 sweet potato diced, no need to peel

1 28 oz can tomatoes, drained and coarsely chopped

2t-1T curry powder

1 t dried thyme

1/4 t allspice

couple of good shakes of hot sauce, to taste

2 16 oz cans dark kidney beans, drained

1 14 oz can unsweetened lite coconut milk

1-2 C chicken broth or vegetable broth if you want to keep it vegan

1T red wine vinegar

salt and pepper to taste

chopped scallions

lime wedges

pour oil into a 4 qt slow cooker cover and set on high while you prepare other ingredients.

add vegetables, stir in spices. add beans, coconut milk,broth and vinegar. cover and cook on low for 6-8 hours. taste for salt and pepper, and garnish with scallions and lime wedges.
