These were posted by Sandy Wells at Gail's. They are wonderful!

Key Lime Squares

2 c flour

1/2/ c powdered sugar

1 c. butter or margarine

1/8 tsp grated key lime peel

pinch of salt

Powdered sugar to sprinkle on top

2 tbsp. flour

1/2/ tsp. baking powder

1/3/ c key lime juice

4 eggs (I use duck eggs)

2 c sugar

Combine flour and powdered sugar. Add slices

of butter/margarine and mix until smooth.

Press dough into 9 x 13" pan. Bake at 350

for 20 - 25 min. Beat eggs at high speed.

Slowly add sugar, salt, flour, baking powder,

lime juice and grated peel (optional). Pour

into crust and bake 20 - 25 min more.

Sprinkle with powdered sugar. Cool, cut into

bars.

I made these last week. They were very rich and very good...

Don't bother with key limes. Too much work for the juice. Persian limes did fine. I invested in a citrus squeezer from Wal-Mart, less than $2.00, that turned out to be a real time saver. The animal crackers (I used Murray Original Animal Cookies, less expensve than two tiny boxes of the real Animal Crackers) made a very nice crust. The suggestion about using the foil to lift the bars from the pan was good, too. DH adores key lime pie, and he vacuumed these up!

No I didn't - I let my sub lapse. They look a lot like pie bars, vs the ones I posted

which are like lemon bars. The CI ones look great, interesting with the animal cracker crust.

 
You're right, Lisa, yours are like lemon bars, and CI's are like pie bars...

Didn't catch the difference until you mentioned it. Either form is still yummy!
