Ok, as many of you who know me know, I think Emeril is a complete troll and can't bear to watch him on TV. That being said, I also think his recipes are flawless and have never been disappointed with the results of anything I've tried from his books or website....except for the homemade Worcestershire sauce which was so damned much work I wanted to rip my hair out. Anyway, I had to make vegan lettuce cups over the holidays for a friend who was visiting, and one of the things I used in them to add flavor was this hoisin blend.
It rocks.
Since that time, I've been using it on EVERYTHING. I highly recommend trying this. I just keep a batch in a squirt bottle in the fridge.

Kicked Up Hoisin Sauce:
1/4 cup distilled white vinegar
1/4 cup sugar
1 teaspoon chopped garlic, chopped
1 small red Szechuan chile pepper, stem removed and finely chopped
1/4 cup chopped yellow onions
1/4 cup chopped celery
1 teaspoon chopped fresh cilantro
1 cup store-bought hoisin sauce
Combine the vinegar, sugar, garlic and pepper in a small saucepan. Bring to a boil and cook for 3 minutes. Remove from the heat. Place the onions and celery in a food processor or blender and process on high speed until smooth. With the machine running, add the vinegar mixture in a steady stream through the feed tube. Add the hoisin sauce and process until smooth.
It rocks.
