my stepdaughter brought what looked like a traditional layered taco dip. What was different, she added a minced chipotle in adobo to the salsa. It was so good. Not too hot, and a really delicious flavor. Give it a try, you will not be sorry. I kept complimenting her, and she said, all I did was add one chipotle. It added a little heat, and that wonderful chipotle smoky flavor. A great idea from a great cook.

Our nephew makes a layered taco dip. The cheese layer is

a mix of cream cheese and cottage cheese. Next layer is refried beans mixed with the green chiles and a little sour cream. Then a layer of salsa. Olives if desired. Layer of finely shredded cheese. Then chopped fresh tomatoes, cilantro, minced green onions.

I think this is the basic recipe; ones I 've seen add guacamole. Red/white/green for the colors...

of the Mexican flag.
