RECIPE: REC: Lemon Meringue Ice Cream Pie in Toasted Pecan Crust. Has anyone made this? It sounds delicious.

That crust looks like it might be tricky...I'd be inclinded to make this in individual ramekins

 
Meryl, I have made this a couple of times already....

It is very easy to make. I did use lemon curd I made from the recipe that Marilyn posted because I had several jars on hand. I didn't have any problem with the crust. When it came out of the oven I used a spoon to ease it back up the sides of the pie pan. It was really good!

 
Barbara...good to know that you've had success with the crust. Does is crumble lots when it's cut?

I haven't had much luck with this type of crust...but then again, I'm willing to claim operator error! smileys/smile.gif

 
because of my wheat probs I make this type of crust all the time . the filling seems

to help hold it together and I haven't had crumble problems. smileys/smile.gif
