we had 6 crockpots going. You stir every 30 minutes, what could be easier. And you don't need food coloring, Barbara. smileys/smile.gif

Lemon Curd

12 lemons or limes soaked whole in hot water

12 eggs

4-1/2 Cup sugar

3 Sticks butter

Remove lemons or limes from water, slice in half, juice.

Beat 12 eggs til blended, add 3 sticks softened butter, then the lemon or lime juice. Add all to crockpot.

Turn on high for about 1-1-1/2 hrs., stirring every 30 minutes, turn on low, continue cooking and stirring til at least 4 hrs.

color will change from white to mottled to yellow (or green) to proper consistency.

pour into sterile jars, use wax paper underneath lid.



 
I'll have to try this - do you know if the eggs are completely cooked after

this? I'd love to make it (using it in a pie) for the upcoming bake sale. Thanks.

 
Dawn, indeed the eggs completely cook. As they cook the color changes (as the recipe says) in color

When it's done and you're eating it, you never find any egg pieces or taste egg.
