RECIPE: Rec: Lemon-Tarragon Grilled Pork Chops. This was dinner last night and, boy, were they ever good!

Lemon Tarragon Grilled Pork Chops

¾ cup water

2 Tbsp. Sugar

2 Tbsp. Kosher salt

¼ cup fresh tarragon (I used a little more)

1 Tbsp. Grated lemon rind

¼ cup fresh lemon juice

4 (6 oz.) bone-in center cut pork chops (about ½ inch thick) (I used veal chops)

¼ tsp. freshly ground black pepper

Cooking Spray

Combine first 3 ingredients in a bowl, stirring with a whisk until sugar and salt dissolve. Pour water mixture into a large zip- top plastic bag. Add tarragon, rind, juice and pork to bag; seal. Marinate in refrigerator 2 hours (I did 4) turning occasionally.

Prepare grill.

Remove pork from bag; discard marinade. Sprinkle pork evenly with pepper. Place pork on grill rack coated with cooking spray. Grill 3 min. on each side or until desire degree of doneness.
