1 c all purpose flour
1/2 c butter, softened
1/2 c chopped pecans
1/4 c sugar
2 eggs
2 tbsp lime juice
1 to 1-1/2 tbsp grated lime rind
1 c sugar
2 tbsp all purpose flour
1/2 tsp baking powder
powdered sugar (opt)
Combine 1 c flour, butter, pecans and 1/4 c sugar; mix until crumbly, using a pastry blender. Press into a greased and floured 12 x 8" baking pan. Bake at 350, 15 mins.
Beat eggs with a fork, adding lime juice, rind, 1 c sugar, 2 tbsp flour and baking powder. Pour mixture over crust. Bake an additional 25 mins. Cool.
Sprinkle with powdered sugar, if desired.
Makes about 3-1/2 dozen.
