LO-FAT SUGAR FREE EGG NOG
(See my notes at bottom)
1 gallon cold skim milk*
2 tsp. vanilla
3 pkgs (small box) instnt vanilla sugar free pudding mix.
1/3 cup sugar substitute* (or 8 individual packs)
1/2 tsp. rum flavoring*
Fresh nutmeg
Yellow food coloring* (opt)
In a large bowl combine milk, vanilla and rum extract. In another bowl blend sugar substitue and dry pudding mix. Whisk into the milk mixture until blended. Add food coloring to desired color, if using. Top with nutmeg. This thickens as it sets, but you can thin by adding a little more milk.
I used 2 quarts Fat Free Half and Half and 1/2 gallon of 1% milk.
Used Splenda for substitute.
Did not have rum flavoring, so added 1/2 cup Meyers Dark Rum. Did not use food coloring.
My DH loves eggnog and said this was much better than any "store bought" that he has had. He could not believe this had pudding instead of eggs as a base. I will try it with the rum flavoring to see which is better. Even with the flavoring you could add some real rum. I did have to add a little more half and half as it thickened, although DH likes a thicker style eggnog it got a little too thick. Keeps in the fridge quite awhile. I used two Lock and Lock 1/2 gallon pitchers to store.
