10 c cooked lobster meat

3 cloves garlic, crushed

6 tsp salt

3/4 tsp pepper

3/4 c wine vinegar

3 c olive oil

1-1/2 c chopped shallots

6 tbsp chopped parsley

2 c minced celery

3 tsp chopped onion

juice of 1 lemon

1-1/3 c mayonnaise

Mix garlic, salt and pepper, add vinegar and mix well. Blend in oil, shallots and parsley. Pour over lobster meat which has been cut into bite-sized pieces; toss lightly.

Refrigerate several hours or overnight. Remove lobster from marinade; To lobster pieces add celery, onion, lemon juice and mayonnaise. Chill well and serve on lettuce.
