4 lg leeks

2 tbsp butter

1/2 c whipping cream

1/3 c chicken broth

freshly grated nutmeg to taste

salt and pepper to taste

Cut whole leeks into 1/2" slices; separate slices; soak in cold water 30 minutes; drain. In lg skillet, melt butter until foam begins to subside. Add leeks; stir to coat with butter. Add cream and broth; bring to boil. Stir, reduce heat to moderate. Cook, stirring occasionally, until thickened, 10-15 mins. Season with nutmeg, pepper and salt, serve.
