1-3/4 c sugar

3 eggs

1 c olive oil

2 c flour

2 tsp baking soda

2 tsp cinnamon

1/2 tsp salt

2 c. mango pureed

1 tsp vanilla

1/4 c walnuts

1/2 c currants

1/2 c. coconut

Cream sugar, eggs and oil. Sift dry ingredients; add to creamed mixture. Stir in mango puree, vanilla, nuts, currants and coconut; blend well. Pour into 2 greased and floured loaf pans. Bake at 350 for 1 hour. Let stand 20 minutes before removing from oven.

 
Question....(more)

Would I measure out two cups of
cut-up mango, and then puree it,
or would I use two cups of
"mango puree"?
