Pizza Dough

3 cups all-purpose flour or bread flour (I use ap)

2 teaspoons instant yeast (I use regular)

2 teaspoons Kosher salt (I use table salt)

2 tablespoons extra-virgin olive oil

(I add about a teaspoon each of dried oregano and basil to the dry ingredients before I add the water)

Combine the flour, yeast, and salt in a food processor and give it a whirl.

Add 1 cup of warm water with the olive oil in it, slowly through food processor's feed tube (whatever that is called). Process for about 30 seconds or in my case my food processor starts to walk, and the dough forms a ball. I start with 1 cup of water and that usually is perfect. Turn out on to a floured surface and knead a few times until dough forms a nice smooth ball.

Place in an oiled bowl and let dough rise until doubled.

I then pull off about a grapefruit sized piece of dough and form the pizza base. I spread on pizza sauce to the very edges of the dough, and I am light on it. I have been baking it on a cookie sheet on the lowest rack in the oven at 500 degrees, depending on the ingredients, from 9-13 minutes.

It has been turning out very good.

No cooking it down? Wow that would be really great and easy! I will give

it a try this weekend. Saturdays are pizza in the cafe, so I will make it Friday before I go home. Thanks!
