Marshmallow Icing

Amount Measure Ingredient -- Preparation Method

1 cup sugar1/3 cup water

8 marshmallows

2 egg whites

1/4 teaspoon cream of tartar

Bring to boil water and sugar. Add 8 marshmallows and stir until dissolved.

Remove from heat and beat in 2 egg whites and cream of tartar. Beat for about 5 min. until icing sets up.

Frost cake with icing and sprinkle with fresh coconut or drizzle with mixture of 1 oz. unsweetened chocolate and 1 tbls. butter melted.

It has the consistency of a 7-minute frosting. Make sure

to refrigerate the iced cake if holding more than a day. The frosting will keep its consistency better.

 
Thank you ~ I am looking forward to a big Easter this year and I'm lucky to have small kids this

year to cook for ~ my son Joe's fiance Jessy has a 3yr old nephew (who calls me Joemommy ~ cute huh) and an 18 mo old neice. I am hyped because I wanted to make cute little bunny cupcakes and the frosting is hard for me and with coconut on the marshmallow icing well... it's perfect and I really really appreciate the recipe.

Kids are so much fun on the holidays. We always do an egg hunt

using the plastic eggs. I used to put a few candies in each one, but now that the kids are a little older, I've switched to money.

 
I love the look on their faces when they find the eggs hahaha ~ here is a fun memory

When my son Joe was little we would hide his plastic eggs and his candy around the house in obvious places (we all lived together my mother 2 sisters and brother Joe and I) and he loved it but he would have us re-hide them over and over and after awhile my mother would start to get mad and wouldn't do it so... Joe at 3yr got smart... he hid the contents of her purse and told her to go look for it and when she went looking for it he told her isn't this fun grandma- trust me my mother didn't find it fun but we all thought it was too funny hahahhahaha
