Mc'Call's best spicecake (from may 1978 issue!! -sorry I never tried this sooner)
2 1/2 c. sifted cake flour (note says sift before measuring - I didn't)
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground cloves
1/8 tsp. ground pepper
1/2 c. butter, softened
1/2 c. light brown sugar , firmy packed
1 c. sugar
2 eggs
1 tsp. vanilla extract
1 1/4 c. buttermilk
Seafoam frosting - below, 1 c. chopped walnuts.
1.Preheat oven to 350. Grease well and flour 2 8x1 1/2" layer pans or 13x9x2.
2. Sift flour, baking soda, baking powder,salt, cinnamon ,cloves and pepper.
3. In large bowl of electric mixer, at high speed, beat butter,sugars
eggs and vanilla til lite and fluffy - about 5 minutes - occasionally scraping sides.
4 At low speed, beat in flour mix (in fourths), alternately with buttermilk (in Thirds), beginning and ending with flour mix. Beat just till smooth about 1 minute.
5. Pour batter in pans. Bake layers 30-35 minutes, rect. 40-45 minutes till surface springs back when pressed.
6. Cool in pans 10 minutes, remove, cool thoroughly. Fill and frost
NOtes from Elaine - either I did something wrong with the frosting or just thought it would be too sweet - so I just layered it with filling and did not frost. It was so good. - Absolutely devoured.
Frosting was immediately like icing and would have looked great but really don't think it necessary.
Seafoam frosting
2 egg whites (1/4 cup)
1 1/2 cups lite brown sugar, packed
1 tbs. lite corn syrup or 1/4 tsp cream of tartar (I used cream of tartar)
1 tsp. vanilla extract
In top of double boiler combine whites, sugar syrup and 1/4 c. water.
2. With portable mixer or rotary beater , beat about 1 minute to combine ingredients. (used reg. mixer and then transferred to double boiler. )
3. Cook over rapidly boiling water , beating constantly about 7 minutes till stiff peaks form when beater is raised.
Remove from water, add vanilla, continue beating till frosting is thick enough to spread.
Enough to fill and frost one cake either size.
