I usually ignore them after I glance at them, but this one looked particularly good.

1 pound extra lean ground beef

1/2 teaspoon sea salt

1 small onion, diced

1/2 teaspoon garlic salt

1 1/2 teaspoons Italian seasoning

3/4 teaspoon dried oregano

3/4 teaspoon crushed red pepper flakes

1 dash hot pepper sauce (such as Frank's RedHot®), or to taste

1 1/2 tablespoons Worcestershire sauce

1/3 cup skim milk

1/4 cup grated Parmesan cheese

1/2 cup seasoned bread crumbs

Directions:

1. Preheat an oven to 400 degrees F (200 degrees C).

2. Place the beef into a mixing bowl, and season with salt, onion, garlic salt, Italian seasoning, oregano, red pepper flakes, hot pepper sauce, and Worcestershire sauce; mix well. Add the milk, Parmesan cheese, and bread crumbs. Mix until evenly blended, then form into 1 1/2-inch meatballs, and place onto a baking sheet.

3. Bake in the preheated oven until no longer pink in the center, 20 to 25 minutes.

Dawn, they were excellent! Very spicy, tender, one of the most delicious meatballs I've ever made...

Used 90% lean beef, had no red pepper flakes, so subbed some cayenne pepper, and subbed whole milk for skim. They were very spicy, (not hot) and what I would imagine an Italian meatball should taste like, with lots of herbs and cheese.

They were delicious on their own, but I simmered them in a simple marinara sauce for 15 minutes after baking, served over pasta. This would easily serve four.

Marinara Sauce
(from The Italian American Cookbook, Mariani and Mariani)

1/4 cup extra-virgin olive oil
3 cloves garlic, crushed
1 28-oz can crushed tomatoes
1/2 tsp. dried oregano
Salt and Pepper to taste
1/4 tsp. sugar

1. In a saucepan, heat olive oil over medium low heat. Add garlic and cook until lightly browned, squashing cloves every minute to release more flavor into the oil, about 4 minutes. The garlic cloves may be left in the sauce or removed.

2. Add the tomatoes, oregano, salt and pepper to taste, and sugar, and bring to a boil. Reduce the heat to a simmer, and cook for 20 minutes. Adjust the seasonings as needed.

Yes, they are good. I made turkey meatballs this a.m. and added

some chili seasoning. Also spicy, not hot. The ground turkey needed something. Also put a little cranberry sauce in there too, which gave it a depth of flavor. Was a little disappointed in the last ground turkey that I made, but these were great!!

Glad you enjoyed them. So did I.
