I made these last night and they were very good! Easy, too.
1/2 cup cooked spinach, drained
1/2 cup feta cheese (I like the low-salt kind)
2 Tbsp crushed walnuts
1 Tbsp mayonnaise
fresly ground black pepper to taste
Puff pastry
Combine ingredients and place about a Tbsp inside of a 4" square of puff pastry. Bake for about 10 minutes at 375 degrees F, and serve warm with yogurt sauce (below).
The original recipe called for 1/2 cup of cooked chicken breast to be added too, but I omitted it as it didn't really go with what else I was serving.

1 cup yogurt
1 tsp lemon zest
1/4 tsp garlic
1/t tsp onion powder
1 Tbsp olive oil
pinch salt
oregano (optional - I left it out)
