I've chosen this as one of several things I'm making for a friend's party I'm invited to.

Do you think pepper jack cheese would go good with this rather than cheddar, just curious. I want flavor and good taste, of course.

Also, is Ritz cracker a good choice, or what other would you suggest?

Mixed Fruit Cheese Ball

16 ounces cream cheese, softened

1/4 pound cheddar cheese, grated (or your favorite)

1 teaspoon coriander

1/4 cup raisins, diced

1/4 cup dried apricots, diced

1/4 cup dried dates, diced

1/4 cup dried prunes, diced

1 cup pecans, chopped

Mix cream cheese, cheddar cheese and coriander until well blended. Add dried fruits and stir gently. Shape into a ball and roll in pecans. Refrigerate overnight.

Serve surrounded by clusters of red and green grapes and wedges of unpeeled apples.

Rec. Goat Cheese Torta with Pesto & Sun-dried Tomatoes...your thoughts on this too

I have no idea where this recipe came from. The recipe suggests bagette. What would you choose, how would you cut it? TIA

This is a killer party item. My friends stand around and inhale
this stuff. If there are any leftovers, it's great the next day. I
usually make my own pesto but grocery bought is okay, too.

6 oz goat cheese
4 oz cream cheese
garlic, peeled, crushed, and chopped ( no # of cloves, I
usually put in lots and more, at least smileys/bigeyes.gif
1/2 cup pesto (at least)
1/2 cup chopped up fine oil-packed sun-dried tomatoes, including 1 - 2 t
marinade
Decor, from fresh herbs, branches of thyme, oregano, rosemary, parsley
sliced baguettes

Mix goat cheese and cream cheese, add the garlic. Taste. Add
salt and black pepper if you want. Line a small glass bowl (about 2 - 3
cups) with plastic wrap. Put about 1/3 of the goat cheese mix into the
bowl. Top this with the pesto. Put another 1/3 of the goat cheese mix
on top of this. Put the sundried tomatoes on this. Top with the rest of
the cheese. Put plastic wrap over the top of this. Refrigerate for at
least 2 hours, and up to four days.

To serve, invert bowl on a serving dish. Carefully remove the
plastic wrap. Decorate with herbaceous materials. Serve with
baguettes. Keep out of the way of the devouring mob. Supposed to serve
up to 20 - 25 with other hors d'oeuvres.

 
I would use the cheddar too- or a combo of cheddar and pepper Jack and

because of all the intense flavors in your cheese ball I might pick a "blander" cracker than Ritz. Generally I use Lavosh or another type of cracker bread or Carr's crackers for something like you are making. If you have a strong-tasting cracker AND strong flavors in the cheese ball sometimes they don't go well together.

We thoroughly enjoyed it. I served it with sliced baguettes. I believe I added some pignoli nuts as a layer.

I have a really great appetizer with roasted vegies and goat cheese if you are interested. A little bit of work, but all is done ahead of time. BEAUTIFUL presentation!

As far as what cracker, I would suggest to use a water cracker as not to interfer with the

flavors of the fruit/cheese mixture. They make a great vehicle for transporting food to mouth but lets the flavor of your goodies shine thru!

 
I sliced the baguette on an angle; very simple. I will look tonight for the other rec and post.
