This recipe was on the packaging of a block of Mozzarella I bought. Hubby left again on a trip and I needed a way to use up left over ingredients. I had 1/2# mild Italian Sausage and the mozzarella so decided to make this up and freeze them. I added some dried chili flakes since I only had mild sausage. As I was making them I thought they would be a disaster as I thought the cheese is just going to melt out in a blob! Well, we tried them last night as a little snack and they were so good. A little of the cheese did melt out at the base but it didn't burn as I thought it would. I mixed a bit of Mayo, grain mustard and horseradish together to dip in. Loved them.
Mozzarella Sausage Balls

Amount Measure Ingredient -- Preparation Method
1 pound hot breakfast sausage16 ounces Mozzarella cheese -- diced 1/4" pieces
1 egg -- beaten
1 cup biscuit mix
Preheat oven to 375 F.
Place all ingredients in large bowl and mix well until blended. Form into 1" balls and place on cookie sheet that has been sprayed lightly with cooking spray.
Bake for 10 - 18 minutes until deep golden brown and cooked through.
