REC Lemon Nectarine Loaf (Quick Bread)
This is very tasty--and it is a good place to
use of fruit that is starting to go.
Lemon Nectarine Loaf
1 medium nectarine
2 1/4 cups sifted flour
1 tablespoon baking powder
1 teaspoon salt
1/8 teaspoon mace
1/2 cup butter or margarine
3/4 cup sugar
1 teaspoon grated lemon peel
2 large eggs
3 tablespoon milk
1/2 cup chopped walnuts
Finely dice nectarine to measure 1 cup.
Resift flour with baking powder, salt and
mace. Cream butter, sugar and lemon peel
together. Beat in eggs one at a time. Add
nectarine and milk, then flour mixture,
mixing to a moderately soft dough. Stir in
walnuts. Turn into a greased 8x4-inch loaf
pan. Place below center of oven and bake at
350 degrees 60 to 65 minutes (mine was done
today around 50 minutes). Let stand 10
minutes then turn out onto wire rack to cool.
Makes 1 loaf.
