I believe this is the recipe I loved and lost. I couldn't get into Gail's to search for my post there. very easy and very good. I usually heat blueberries in maple syrup or serve with a baked apple or fried bannas. enjoy

Oatmeal Buttermilk Pancakes Recipe

Yield: 4 servings

Ingredients:

2 cups old fashioned oatmeal 2 1/2 cups buttermilk

2 eggs lightly beaten

1/4 cup butter or margarine, melted and cooled

1/2 cup all-purpose flour

2 tablespoons sugar

1 tsp. baking powder

1 tsp. baking soda

1/4 tsp. salt

Combine the oats and buttermilk for 15-30 minutes. Add eggs and butter. Stir well. Add flour, sugar, baking powder, baking soda and salt. Stir gently. Let rise for 10 minutes. Cook on a medium hot grill. I use a 1/4-cup-measuring cup to ladle onto the grill. Perfect size every time. Serve with warm maple syrup or strawberry butter.

 
Randi, have you tried freezing these? I make my pancakes in huge batches and freeze

Gene loves them and so do our grankkids, so I like to always have batches in the freezer. I make a packaged mix of them and add buttermilk and fresh blueberries. They freeze great and microwave perfectly.

 
that's a great idea Karen, I'll have to try that. I don't make them often enough and it would be so

Randi, I just finished 2 plates of these! Delicious, and you'd never know they're healthier than

regular pancakes. I think they'd be wonderful with sour cream and marmelade, but I didn't have either. Butter and syrup were just fine.

I'm going to call you Randicakes from now on.

 
Randi, is this the post you were looking for? It's the only one I could find that seemed to fit.

Problem is, some of the amounts seem to have been replaced with = signs. Marilyn responded to the post and said she makes them all the time, perhaps she has the recipe with the recipe.

Hazelnut Oatmeal Pancakes 2 cups buttermilk 1 = cups old-fashioned oats 2 eggs = cup unbleached all purpose flour 1 tbls sugar 1 tsp baking soda = tsp salt = cup chopped toasted hazlenuts Mix buttermilk and oats in large bowl. Let stand 5 minutes. Whisk in eggs. Mix in flour, sugar, backign soda and salt; stir in chopped hazelnuts. Heat a heavy, large skillet over lmedium- high heat. Brush with oil. Drop batter by 1/3 cupsfulls into skillet, spacing apart. Cook until bubbles form on the top of the pancakes, about 2 min. Turn and cook until bottoms are golden brown, about 2 min. more. Transfer to plates and serve with syrup. Makes about 12

Hazelnut Oatmeal Pancakes
Yield: 12 Pancakes

Ingredients

2 C Buttermilk
1 1/2 c old fashioned oats
2 eggs
1/2 c flour
1 TB sugar
1 ts baking soda
1/2 tsp salt
1/2 c hazelnuts; chopped, toasted
1 vegetable oil
maple syrup

Instructions

Mix buttermilk and oats in large bowl. Let stand 5 minutes. Whisk in eggs. Mix in flour, sugar, baking soda and salt; stir in chopped hazelnuts. Heat heavy large skillet over medium-high heat. Brush with oil. Drop batter by 1/3 cupfuls into skillet, spacing apart. Cook until bubbles form on top of pancakes, about 2 minutes. Turn and cook until bottoms are golden, about 2 minutes more. Transfer to plate.

Repeat with remaining batter, brushing skillet with oil as needed.

Serve with maple syrup.

notes: pecans work great with this recipe too.

Joe, try these over the weekend, even better than last recipe.

 
Randi, I just go to the new swap and use their advanced search. You have to

choose Gail's swap and all dates. I don't always have luck at it, for example, if you're looking for a roast chicken recipe, forget it. However, there aren't that many entries with oatmeal pancakes. That's what I put in. The results using both words come up first and there was your name. Searching by poster name doesn't work for me, either, but you can bring up 30 results on a page and use the ctrl/F feature to search through them for a name. I'm glad it was the right recipe.
