It is titled "Roseanne Cash's Potato Salad", from Smitten Kitchen. I used 4 hard-boiled eggs, and I found a wonderful new use for my mini-chopper that came with my KitchenAid immersion blender: I chopped the pickles (I used sweet gherkins) and celery with the chopper. So much faster than using a knife and cutting board! The touch of fresh dill really perked it up, too. I'm lucky to have a pot of dill growing on my patio.

If you make this recipe, be careful with the onion. I think it is too oniony, and I would REALLY cut back on the onion next time. Even so, DH and I ate almost half of it last night. Enjoy!

This is a beautiful salad and is on my list for July 4th. One small red onion is not out of line

for 3 lbs. of potatoes along with all the other ingredients. I have found that those red onions have such a wide range of flavor, much like jalapeños. I go by their smell and if I detect they are strong, I cut back a little on the amount I use. If you can find Torpedo red onions at a local Farmer's Market, try some of those. They are available for such a short time, but are wonderful, and usually sweeter and milder. I like the small ones best.

Re onions: we love this little tip from a yoga retreat recipe:

Dice or thinly slice half of a red onion. Put in glass bowl.
Bring 2 cups of water to boil, pour over onions and add 1 Tbl of cider vinegar. Let set off heat for 10 minutes. Drain, use and keep the remainder in the frig.

These process leaves a subtle bite to the onion, but the sharpness that coats your tongue and seems to stay FOREVER (or at least until you are forced to eat an entire pint of Ben & Jerry's New York Super Fudge Chunk ice cream and seal off your taste buds for the next decade) is happily not there.

Honestly, since following this tip, it's the first time I've enjoyed onions in a salad.
