RECIPE: REC: Orange-Chipotle Glaze for Fish/Chicken/Pork

Tried this last week and it was delicious. I used it w/ salmon but I will definitely use again with pork and chicken.

Orange-Chipotle Glaze

For fish, chicken or Pork

2/3 cup orange juice plus 1 tsp. grated zest from 2 oranges

1 small shallot, minced (about 1 T.)

1-2 chipotle chiles in adobe sauce, minced (1 to 2 T.)

2 tsp. minced fresh thym leaves

1 T. light molasses (I used honey)

¾ tsp. cornstarch

Salt

Combine juice, zest, shallot, chile, and thyme in small saucepan, then whisk in molasses and cornstarch. Simmer mixture over medium heat until thickened, abut 5 minutes. Season with salt. Reserve half of glaze for serving and the other half for brushing on pork/fish/chicken.

hey deb! i used the marinade last night on pork loin steaks. excellent.

i subbed goya's bitter orange marinade for the fresh orange juice because i didn't have fresh ones, and subbed rosemary for the thyme 'cause my sweetie said she'd like some rosemary soon.
