Orange Roughy with Feta Cheese Sauce

Amount Measure Ingredient -- Preparation Method

4 ounces Feta cheese with basil1/4 cup mayonnaise

1/4 cup sour cream

1/4 cup red onion -- diced

2 Roma tomatoes -- chopped

3 tablespoons capers

1 pound orange roughy fillets

or other white fleshed fish fillets

Line a baking sheet with foil. Preheat over to 400 degrees. Mix the sour cream, mayonnaise, red onion, Roma tomatoes, and capers. Mix together and season with black pepper. Lay the fish fillets on the foil and spread the cheese mixture on top of the fillets. Season with salt and pepper.

Bake in oven approximately 10 minutes. I broiled them at the end for about a minute.

NOTES : I adapted this recipe from a recipe on Epi called Orange Roughy ala Greque, and Ron in Worcester's Sour Cream Halibut. We really liked this, even my feta hating husband liked it. Here is the link for Epi and I believe Ron's recipe is in favorites.

A side note. Sad news re: Larry LaPrise...

With all the sadness and trauma going on in the world at the moment, it is worth reflecting on the death of a very important person, which
almost went unnoticed last week.

Larry LaPrise, the man that wrote "The Hokey Pokey" died peacefully at the age of 93.
The most traumatic part for his family was getting him into the coffin. They put his left leg in. And then the trouble started.

Sorry, I could not resist. I received this today, and it has made me smile all day. Then again, I am simple.

 
I not only have a 45 of The Hokey Pokey but I know how to DO the Hokey Pokey- dates me for sure

 
A few years ago, my son was telling me about a shop he went to....

He was about 7 or 8 at the time, and he came home from a skateboard shop, and said they were playing "those black CD's".

"Black cd's"? I say, racking my brains trying to think of a CD cover that had a black background...

It wasn't until he made a hand motion, like the DJ mixers, that I realized he was talking about the actual media...!
