1 1/2 lbs baby carrots, washed

1 red onion, peeled, cut into 8 wedges

2 Tbsp olive oil

1 Tbsp fresh chopped rosemary

1 Tbsp honey

Garlic powder

Salt to taste

1/4 tsp freshly ground black pepper

Preheat oven to 400°F. In a large bowl, gently toss carrots, red onion, rosemary, and honey with olive oil. Place in a rimmed baking pan.

Sprinkle with garlic powder, salt, and pepper.

Roast for 30-40 minutes until well browned.

 
This sounds great, thanks! It reminds me of a roasted potato with rosemary

recipe that I love. I may add some potatoes to this. Thanks for posting. It's good to see you back here. You were missed.

 
Dawn, this looks wonderful. I happen to have 2 pounds of carrots. I'll try this today

but I will try with regular peeled and diced carrots. I think it will work.
