Pan Fried Ravioli with Roasted Red Pepper Pesto
Caprial Pence
Makes 4 servings
3 whole red peppers, roasted and peeled
2 cloves garlic, chopped
½ cup walnuts, toasted
½ cup Parmesan cheese, grated
1/3 cup olive oil
2 tsp. fresh basil, chopped
Salt and pepper
2 Tbsp. olive oil
16 fresh cheese ravioli
¼ cup Parmesan cheese, grated
For the pesto:
In a food processor, place peppers, garlic, walnuts and process until roughly chopped. Add Parmesan cheese and process. With the motor running, slowly drizzle in the oil. Add basil. Season the mixture with salt and pepper and mix again. Set aside.
For the ravioli:
Heat oil in a large sauté pan until very hot. Add ravioli and cook until golden brown on both sides. Place on plates and top with roasted red pepper pesto and Parmesan cheese.
Note: Be sure to use fresh ravioli…the dried packaged kind does not work here.
