The picture looked so good and I love to cook with seasonal ingredients so I had to try this one. I made it last night for dinner--from Oct Cooking Light and it was fabulous! We couldn't get enough! It is a very tweakable recipe and gives you the opportunity to use some of your favorite rubs and herb mixes.

I did tweak some based on what was in the fridge:

I had boneless, skinless chicken breasts that I coated with a roasted garlic rub then sauteed; I had spinach in the fridge that I used instead of the chard, but I would like to try the chard too; I sprinkled the cubed squash with a toasted fennel spice mix that I had.

Wow was this good!

Deb-is he a "if it's orange it ain't food" type of guy or are other orange

things okay? If so, what about sweet potatoes + spinach instead of squash + chard?
