I halved the recipe for four, and doubled the cheese as suggested. Sprinkled the cheese with herbs. Served with grilled steak and a salad with oven-baked croutons. DH went CRAZY over these potatoes.

Oven-baked crouton recipe...tear a bagette loaf into small rough chunks...sprinkle with EVOO and some herbs (I love Penzey's Sandwich Sprinkle Seasoning for this ) and some S & P. Bake for 10-15 minutes until crisp.
