I have no idea where I got this from but it's good.

PASTA WITH GOAT CHEESE & GREENS

1 lb. linguine (spinach, herb or plain)

12 oz semi-soft goat cheese (Chevre)

3/4 cup milk or heavy cream - my fav

2 tbls butter

1/2 cup chopped scallions including green part

1/2 cup chopped fresh basil

5 medium plum tomatoes, chopped

1/2 cup toasted chopped nuts such as; walnuts,

almonds, hazelnuts or pine nuts (do not chop

pine nuts)

Cook pasta according to directions. While pasta

is cooking, in a small saucepan over medium

heat, heat the goat cheese with the butter and

milk stirring until well blended. Remove sauce

from heat. Drain pasta and place in serving

bowl. Toss with cheese sauce until well coated

and add the chopped herbs and veggies.

Garnish each serving with toasted nuts.

The cheese sauce is basis and it works well with

many different combinations of herbs and

vegetables. Try spinach, arugula, peas,

steamed or sautéed zucchini strips, roasted

peppers, roasted garlic. You should have the

idea by now. It is also delicious with just the

sauce and nuts - increase nuts to 1/3 cup

it is Dawn. I'm finding recipes I had forgotten about on the old swap and some are...

just really nice surprises. this was one of them.
