Someone made a dip with this sweet jalepeno relish and I was addicted but the relish wasn't available locally so I played around with this to come up with my own versions. Now there are several brands including Harris Teeters own but they are easy to make and vary the heat and flavor so just make your own.

PEACHIES PEPPERS

Canned or jarred whole pickled jalepeno peppers

Sugar

Optional add-ins: pickling spice, other HOT peppers to spice them up, garlic, red pepper flakes

Slice the peppers about 1 1/2 as thick as the pre-sliced ones you get in the store (I tried using pre-sliced ones at first and they get too thin and leathery). Layer the peppers in a jar and then add a layer of sugar. Put your additional add-ins in the layers as you go. Keep layering until you have used up all the peppers and finish with a layer of sugar. Put the top on and put on a shelf for a few days. The sugar will candy the pepper slices and make a syrup.

To Make Relish - just chop the jalepenos and layer with sugar to make a nice sweet hot relish.

You end up with these slightly crunchy, sweet, but hot peppers. So here are some ways to use them:

BBQ CHICKEN NACHOS

Shred a rotisserie chicken & add your favorite bbq sauce but don't get too saucy so that it makes the chips soggy. Layer chicken on tortilla chips. Add layers of cheeses (cheddar & jack), sliced black olives, sliced green onions, diced tomatoes and the peppers. Bake or broil until cheese is melted and serve with sour cream and salsa.

Add to fresh salsas, especially fruit salsas.

Add to coleslaw

Add to brownies with a little cinnamon for a Mexican twist

Add to chicken salad along with a little lime juice and cilantro

Mix the relish (or chop the slices into a relish) with some cream cheese and finely grated cheddar to make a spread or a cheese ball using a little of the juice to make it a spreadable texture.

Mix relish or diced up peppers in with cheddar and montery jack cheese and a little mayo and grated onion to make a pimento cheese spread with a kick - also good on or stuffed into hamburgers and grilled until it melts!
