My neighbor gave me this recipe and it is a delicious side to serve with meats, chicken etc.

PICKLED CUKES & ONIONS

8 cups cucumbers, sliced thin

1 cup onion, sliced thin

1 red pepper, sliced/or diced

2 tsp. celery seed

1 Tbls. salt

2 tsp. mustard seed

1 1/2 cups white vinegar

2 cups sugar

Place cukes,onion, and red pepper in large bowl. Sprinke the 1 tbls. salt over all. Let stand 1 hour. Rinse. Pack veggies into jars. (not sure how many needed)

In a non reactive pan, mix vinegar,celery seed, mustard seed and sugar, bring to a boil, lower heat and simmer until sugar is dissolved. Remove from heat and pour over veggies. Cool, cover and put into refrigerator. I let mine stay a few days before using. Gives time for flavors to meld. This lasts a long time.

NOTES: I hope the directions are not too hard to understand, but this is how I was given the recipe. Also, my neighbor put her recipe into plastic containers in the fridge. I think jars would be better.

you will get a chance to try the recipe and let me know how you like it. Had some peaches that I was going to lose if not used, so have the Peach Crumble in the oven now. Hard to believe we are married 54 yrs. It's funny, but Aug.2 that year we got married, was as hot that day as it is today back east.

 
I have to fess up ....

that this recipe is nearly exactly like one I have made off and on for years! Very good! And, it's also nearly like Dawn's refrigerator pickles!

My cucumbers have slowed down some but I still picked about 25 yesterday! The second planting will be ready in a week or two. Wish I could share with you!
