My neighbor gave me this recipe and it is a delicious side to serve with meats, chicken etc.
PICKLED CUKES & ONIONS
8 cups cucumbers, sliced thin
1 cup onion, sliced thin
1 red pepper, sliced/or diced
2 tsp. celery seed
1 Tbls. salt
2 tsp. mustard seed
1 1/2 cups white vinegar
2 cups sugar
Place cukes,onion, and red pepper in large bowl. Sprinke the 1 tbls. salt over all. Let stand 1 hour. Rinse. Pack veggies into jars. (not sure how many needed)
In a non reactive pan, mix vinegar,celery seed, mustard seed and sugar, bring to a boil, lower heat and simmer until sugar is dissolved. Remove from heat and pour over veggies. Cool, cover and put into refrigerator. I let mine stay a few days before using. Gives time for flavors to meld. This lasts a long time.
NOTES: I hope the directions are not too hard to understand, but this is how I was given the recipe. Also, my neighbor put her recipe into plastic containers in the fridge. I think jars would be better.
