Sorry people...I should not have relied on memory. Here is the complete recipe - nearly the same but with a few additions including dumplings. (I spent considerable time getting this recipe right. I think it's one of my favorite comfort food dinners. Enjoy!)
CHICKEN AND DUMPLINGS
Brown, in butter, one large cut up roasting chicken or stewing half.
Add chicken broth just to cover.
Add a few carrots, quartered onion, celery stalk, a few peeled garlic cloves, parsley and peppercorns (around 10).
Simmer all very gently 2 hours. Carefully remove chicken to a platter and keep warm. (Now here's what I forgot to tell you...)
Strain the broth and SKIM THE FAT.
Return stock to the pot and bring to a boil.
Slightly thicken with Wondra Flour. (Just pour and whisk.)
Season to taste with salt and lots of pepper.
DUMPLINGS:
2 C. Bisquick
2/3 cup milk
Garlic powder, minced fresh parsley and summer savory or thyme. The batter should be flecked with herbs.
Mix well and drop by small spoonfuls into simmering gravy.
Cook, uncovered, 10 minutes.
Cover the pot and cook 10-12 minutes more.
Serve chicken in large shallow bowls (pasta bowls work nicely). Smother with gravy and a few dumplings each.
