From April Bon Appetit: Made this for dinner tonight because it looked quick and easy. Didn't know how good it was going to be tho!

Couple of small changes I made: First, I roasted the asparagus instead of broiling (I always burn everything I broil), I had some smoked salmon so I used it in place of the prosciutto and for some reason I decided that the whole stack should be served on a toasted English muffin -- whole wheat of course, in order to satisfy that urge to eat "healthy"! I tried to make my plate look like the picture (I need pics as I am not clever enough to do these things myself...) and I had a ripe roma tomato so I chopped it up and sprinkled it around the edge of the plate with the chive oil. Then I lightly sprinkled the plate with some coarse black salt (the one from Trader Joes). It looked too pretty to eat, but boy was it good!
