I made these tonight and they were very tasty. Something a little different than heated up sliced pork.
2 cups cooked pork
1 cup leftover stuffing
1 cup pork gravy
1 egg
3 T lemon juice
1/2 cup breadcrumbs
Preheat oven to 350°F; combine first 3 ingredients in a food processor and pulse just until the mixture is blended and homogenous.
Measure out about 1/4 cup of the mixture and roll it into a ball. Beat egg and lemon juice together, then dip the ball first in the egg and then roll in the breadcrumbs.
Roll each croquette gently into the traditional cone shape and place on a greased cookie sheet. Bake at 350F for 25 minutes or until golden-brown.
Serve with leftover cranberry sauce.
