2 cups cabbage -- finely shredded1 small red onion -- finely chopped
1 small carrot -- grated
1 tablespoon fresh mint -- chopped
1/4 cup fresh or canned pineapple -- finely chopped
1/4 cup mayonnaise
1 stalk celery -- finely chopped
2 teaspoons orange or lemon juice
3/4 pound ground pork
1 tablespoon crunchy peanut butter
1/4 cup white rice -- cooked
2 spring onions -- finely sliced
1 tablespoon lemon juice
1 clove garlic -- minced
1 egg
3 tablespoons honey roasted peanuts -- finely chopped
4 hamburger buns
Combine shredded cabbage, red onion, carrot, mint, pineapple, mayo, celery and juice in medium bowl; mix well. Set aside.
Combine ground pork, peanut butter, rice, spring onion, lemon juice, garlic, egg, peanuts, salt and pepper in medium bowl. Mix with hands until well combined. Divide mixture into 4 portions, shape each into round patties.
Heat a large frying pan or grill plate, brush with oil. Cook patties 3-4 minutes each side or until brown and cooked through.
Divide slaw mixture between the bottom parts of the buns. Top with burger.
